Baked Spiced Salmon

This is a quick fix. And a great one if you are at the point where your ‘healthy eating’ resolution is beginning to fizzle. Or if you are just wondering what to make for dinner.

So many good reasons to make this….First of all, it’s salmon, a healthy ingredient to start off with. It has spices, which are so good for you! And  you bake it!  Simple, delicious and healthy! And it is totally ok to combine Indian dishes with your regular menu. For example, you could pair this with your favorite salad and a crusty bread  or serve with mashed potatoes and green beans for dinner. It’s all good.

You need salmon, canola oil, coriander powder, cumin powder, red chilly powder or cayenne, lemon, cilantro, garlic and salt. This picture shows cumin seeds and coriander seeds. You can grind these to make a powder or just use the readymade ground form.

It’s time to make a spice rub. I like to call this a wet rub. All you do is combine all the spices and  grate the garlic into the bowl…

add the lemon juice and salt and mix it all up….

till you get this…

and then slather it on the salmon ….

And that is it!  Your salmon is ready for the oven…and you are ready for your deee-licious salmon!

Here is the recipe:-

2 lb salmon fillet

4 cloves garlic, grated

1 ½ tsp coriander powder

1 tsp cumin powder

1 tsp red chilli powder

2 tbsp lemon juice

salt to taste

¼ tsp pepper

cilantro for garnish

Preheat oven to 400 degrees fahrenheit.

Rinse the salmon fillet in cold water and pat dry.

Line a baking sheet or glass pyrex dish with parchment paper or Aluminum foil.

Place salmon fillet on dish. Sprinkle salt on salmon and flip the salmon.

In a small bowl, mix 1 ½ tsp coriander powder, 1 tsp cumin powder, 1 tsp paprika or red chilli powder, salt, 2 tbsp lemon juice, 1 tbsp canola oil. Grate the fresh garlic and add to this mixture. Whisk this. It will form a thick marinade.

Brush this on the salmon and bake for about 12 minutes till salmon is opaque and flaky. It’s done!
